(yahoo!life) — September 28, 2026: Eating two eggs a day has long been part of the debate over dietary cholesterol and heart health. New research suggests that the overall composition of a diet, particularly its saturated-fat content, may be more important to LDL cholesterol levels than dietary cholesterol from eggs alone.

A randomized crossover study published in the American Journal of Clinical Nutrition examined 61 adults over three five-week dietary periods. One diet included two eggs daily while keeping saturated fat low; another excluded eggs but contained more saturated fat; and a third included one egg a week alongside higher saturated fat.

Among participants who completed the study phases, the two-eggs-a-day diet was associated with a reduction in LDL cholesterol compared with the higher-saturated-fat diet. The researchers also found a significant relationship between saturated-fat intake and LDL levels, while dietary cholesterol itself was not significantly associated with LDL in their analysis.

The findings, however, do not mean that eating two eggs every day automatically lowers cardiovascular risk. The researchers noted changes in LDL particle patterns, including an increase in smaller LDL particles, which are considered more atherogenic. They concluded that the potential cardiovascular implications require further consideration.

Eggs remain a nutrient-dense food. Two large eggs provide protein along with nutrients including vitamins A, D and B12 and choline. Their nutritional impact, however, depends on what else is included in the meal and the wider diet.

Research examining longer-term health outcomes has produced differing findings. A large international analysis involving about 177,000 people across 50 countries found no significant association between consuming seven or more eggs a week and major cardiovascular disease, total mortality or blood lipid levels when compared with very low egg consumption.

Other observational studies have reported associations between higher egg consumption and cardiovascular outcomes in specific populations. Such studies can identify relationships but cannot establish that egg consumption itself caused those outcomes.

The evidence therefore points to the broader dietary pattern as an important consideration. Foods high in saturated fat, such as some processed meats, butter and certain full-fat products, can affect LDL cholesterol, while eggs can provide protein and several essential nutrients.

The 2025 controlled study specifically examined adults with relatively low baseline LDL cholesterol and was conducted over short dietary periods. Its results should therefore not be interpreted as a universal recommendation for everyone to consume two eggs daily.
